A little bit about coffee

Although there are thousands of species, most of the commercial coffee in the world is either Arabica or Robusta. Arabica is grown at altitudes from 2000 to 6000 feet and offers superior flavor; Robusta is grown at lower elevations and has almost twice the caffeine and a lower acid content. The two are often blended together.


Coffee drinking began on the Arabian Peninsula and was originally used for medicinal or religious purposes, owing, no doubt, to the stimulative effect of the caffeine.

 

Somewhere around 1000 A.D., the practice began of brewing the beans and serving coffee as a hot beverage. Coffee came to Western Europe as part of the spice trade but was originally considered the “drink of the devil” by priests in Rome because it was favored by Moslem “infidels.” Pope Clement VIII eventually lifted the ban in the late 1500s by blessing coffee and paving the way for the first coffee houses.


Today, coffee is the most popular beverage in the world with over 400 billion cups consumed annually. Coffee is second only to oil as a commodity on world markets. It is also interesting to note that the heavy tea tax imposed on the American colonies in 1773, which caused the "Boston Tea Party,” resulted in America switching from a preference for tea to a preference for coffee. Drinking coffee was — and still is — an expression of freedom.
